“Rainbows” makes a great party theme, especially for St. Patrick’s Day because of the whole pot of gold at the end of the rainbow thing. All I know is that rainbow is my favorite color and I plan to make several of these sweet rainbow treats for a party I’m hosting on St. Paddy’s Day.

First up, Rainbow Cupcakes from Baking Bites. Just divide the cake batter into five bowls and add food coloring.

Can you imagine serving this Rainbow Roll Cake? If you’ve ever made a pumpkin roll, you know they look more difficult to make than they really are. This colorful cake from Lovefood Today looks like pure baking fun.

How about this Rainbow Tie Dye Cake from Bird On A Cake? It’s Rainbolicious! Wouldn’t the kids love it?

Remember those jello poke cakes? They’re back. Here a great Rainbow Jello Poke Cake from Kid Friendly Things To Do. If I remember right, poke cakes are incredibly moist – and colorful.

If you have cake, you need icing. Niki’s Sweet Side shows How To Make Rainbow Cupcakes by decorating with rainbow frosting. I’ve never been too confident with a pastry bag, but even I think I can do this technique.

Here’s a different way to use rainbow frosting. The Tablespoon blog adds colorful frosting to a box brownie mix to make these gorgeous Rainbow Brownies.

These Rainbow Cookies from Pint Sized Baker are easy enough for kids to make. Just add jello powder to the cookie recipe. The jello adds flavor and color.

Would you look at this Rainbow Cheesecake from In Katrina’s Kitchen? Wow! I’m going to make this for my son’s birthday this weekend since he requested cheesecake instead of a birthday cake. Even though he’ll be 28, this should bring the kid out in him.

Maybe these Rainbow Mini Cheesecakes from The Domestic Rebel would be more to his liking. They’d be easy for his friends to pick up and eat, that’s for sure.
