As the days get shorter and the temperatures fall, the cravings for comfort food start to rise! Today we’re sharing a home-style beef stew recipe that’s not only delicious, but an easy to make slow cooker recipe that is perfect for entertaining. Simply find a few minutes in the morning to gather and prepare your ingredients and you’ll be free the rest of the day to prepare for your guests. Just be warned-this recipe will have your house smelling amazing and you may be tempted to dig in before the guests arrive!

Ingredients:

  • 2 lb stew meat, chopped into 2″ cubes
  • 1 cup flour
  • 1/4 cup olive oil (more if needed)
  • 5 large potatoes, diced in 1/2″ cubes
  • 2 medium yellow onions peeled and quartered
  • 1 cup frozen peas
  • 1 cup sliced carrots
  • 1 cup dry red wine
  • 2 cups beef broth
  • 1 tsp kosher salt
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp cornstarch
  • 1 cup cold water

Directions:

Prepare your slow cooker by adding chopped vegetables.

Heat olive oil over high heat in a large skillet.

Coat the stew meat lightly in flour and add to skillet. Cook until browned and add to crock pot, adding more meat as space allows.

When all meat is cooked, add red wine to skillet to deglaze pan. Simmer wine for two minutes. Remove from heat and pour wine mixture over meat and vegetables.

Add beef broth, thyme, bay leaf and salt and stir to combine. Cook on low heat for 8 hours or high heat for 5 hours.

When ready to serve, combine cornstarch and cold water in small bowl and stir until smooth. Slowly add cornstarch mixture to soup to thicken to your desired consistency. Stir well and serve immediately. Serves 4.

This stew pairs wonderfully with warm rolls and butter or even grilled cheese sandwiches. This recipe freezes well also-so make a double batch!
