The big day has come and gone and you have a fridge full of leftovers to remind you of that fantastic holiday meal. The question now is what to do with them? Here are ten ideas for recipes you can make with your leftover Thanksgiving favorites!

Shepherd’s Pie

What better use for leftover mashed potatoes than creating a shepherds pie? Saute your favorite mixed veggies and leftover turkey with broth and transfer to a baking dish. Cover with mashed potatoes (brought to room temperature beforehand) and bake 20-30 minutes.

Turkey Quesadillas

Saute shredded leftover turkey with taco seasoning and mix with seasoned black beans. Spread mixture on half a tortilla, top with cheese and fold in half. Cook in a hot skillet, turning once, until both sides are golden brown.

Turkey Cobb Salad

Toss greens with leftover chopped turkey, chopped hard boiled eggs, chopped onion, avocado, tomato, bacon, and bleu cheese. Top with your favorite dressing to complete.

Turkey Pot Pie

Spread a premade pie crust in a deep dish pie pan. Add your favorite leftover veggies and shredded turkey to pan. Mix in one cup cream of chicken soup (or cream of mushroom if you desire.) Top with additional premade pie crust and crimp edges. Bake for 35-40 minutes or until crust is golden brown.

Turkey Tetrazzini

Cook wide egg noodles according to package directions. In a separate pan saute 2 minced cloves of garlic in 4 tbsp butter. Add 16 oz sliced mushrooms and cook until tender. Add two cans cream of mushroom soup and one cup turkey broth along with 3 cups leftover shredded turkey. Cook about 10 minutes. Toss with noodles to serve.

Cranberry Turkey Sandwich

On toasted leftover rolls add shredded turkey, top with stuffing and cranberry sauce. Add BBQ sauce for an extra kick if desired!

Turkey Chili

Brown ground sausage in oil over medium high heat, add 2 minced cloves of garlic, 1 chopped onion and 1 chopped red bell pepper and cook until veggies are tender. Stir in 1 tbsp coriander, 1 tbsp cumin and 1 15 ounce can of diced tomatoes. Add 1 lb chopped leftover turkey, 1 can of black beans, 2 cups of chicken stock and 1 cup corn. Simmer 1 hour, top with shredded cheese and sour cream if desired.

Thanksgiving Pizza

On a premade pizza crust spread mashed potatoes and top with shredded cheddar cheese. Roll stuffing into balls and add to pizza, top with shredded turkey and cranberry sauce if desired. Bake 10-15 minutes or until cheese is golden brown.

Turkey Soup

After Thanksgiving create turkey stock from the turkey carcass. Simmer carcass with 3 quarts of water, chopped carrots, onion, bay leaf and celery covered for 1.5 hours. Remove carcass and bay leaf. Skim any fat or residue from top. Add 3 cups chopped turkey meat, cover and simmer 30 minutes. Season to taste with poultry seasoning. Add rice or noodles as desired and cook additional 20 minutes or until done.

Turkey and Cheese RollUps

Spread cream cheese on large tortilla. Top with shredded turkey, diced red pepper, and shredded lettuce. Roll tortillas and slice to serve.
